I was at my neighbors house a few days ago and her house smelled so good. She was cooking soup and her windows were open. It was the first “fall feeling” day we’ve here and it was gorgeous out.
I asked her what she was making because I couldn’t get over how delicious it smelled, and she told me Zuppa!! I was very confused but I asked her to tell me what she puts in it because, like always, I wanted to try my hand at making it allergy free and paleo!
After some research I found she was making Zuppa Toscana. It’s an Italian, cream based soup made with potatoes, sausage, and kale- a very popular soup someone might get from the Olive Garden.
Now, I know my soup isn’t “Zuppa Toscana”, but I have a very good explanation for this:) We got hit by hurricane Matthew over here on the east coast and because of that, nothing was on its usual schedule. It takes some time for things to be cleaned up and for businesses to be back up and running after these kind of natural disasters. I’m just counting my blessings that my house is still intact and that I can take a hot shower.
So, with everything being delayed, I wasn’t able to get my favorite sausage from our local farmer, and I ended up making the soup with chicken from the grocery store. Which, in all, was fine! Because it was SO frikken delicious! Technically, if you want true “Zuppa Tuscana” then make this with Italian sausage, or you can follow the recipe below and enjoy a lighter fare, Creamy Chicken, Bacon and Kale Zuppa!! (Zuppa means soup, right? If not, then none of this really makes since… )
I can’t wait to try this with some zesty sausage from the farm, but for now…
