In the midst of seasons changing, vacations being planned, babies growing, and all else that occupies this busy life of mine, I wanted to share a little something. I’m sure everyone has their Easter meal traditions, but we tend to be a go with the flow kinda family. At this point in life it’s just easier:) This simple and easy Roasted Chicken recipe is something I have been working on, and I think it will be perfect for us this year. Maybe you can find some comfort in it too!
Start by following basic steps to prep a whole chicken for roasting. Pat the outside of the chicken dry with some paper towels. Then, using coconut oil in its melted form, rub chicken. Being sure to cover all of the skin. After washing your hands, use one hand to hold chicken so that the cavity is exposed and use your clean hand to sprinkle some sea salt and pepper into the inside of the chicken. Half of the lime will also go inside of the cavity too; it can go in now, or you can wait until later. Just make sure it goes in before you begin cooking!! LOTS of hand washing goes on while prepping raw chicken! (Be sure to wash your hands after every time you touch the raw chicken.) Sprinkle the outside of the chicken with sea salt, pepper, garlic powder, and onion power. If you have not put your lime half inside the cavity, do that now.
Position chicken on the center of a baking pan and carefully place the pan into your preheated oven. For a 3.5lb chicken, cook about 50 minutes at 400*. Then remove it from the oven, and carefully brush it with this homemade glaze recipe:
Mix together honey, and juice from the remaining half of lime. (Add a little lime zest too for more flavor!)
Stir in 1/4 teaspoon each of your spices: garlic powder, chili powder, onion powder.
Once the chicken is covered in the glaze, place it back into the oven for an additional 15 minutes- or until the chicken is cooked through.
